Easy peasey clementine sqeezey… Super simple cake


Once you have a simple, fail proof cake recipe under your belt, you can’t go far wrong. Here’s my favourite basic recipe which can adapted and tweaked by adding different flavours.

Crack three eggs and weigh them, then weigh out the same amount of caster sugar, soft butter and self raising flour.

Beat the sugar and butter together until light and fluffy then add the eggs one at time until they’re combined. If you’re adding flavours add them at this point. Vanilla, chocolate chips, cocoa powder, coconut, cinnamon, fruits, the list is really endless.

For this one I zested 6 clementines and added all but a teaspoon of it to the mix, before juicing the fruits and setting the juice aside. I added in the flour in four lots to ensure it was well combined before drizzling in some of the clementine juice to loosen the batter to dropping consistency: Three tablespoons did the trick.

I sprayed a bundt tin with cake release spray, and put the batter in before baking at 180oC fan.

While the cake was baking I added icing sugar to the remaining clementine juice plus a few drops of passionfruit extract. The floral notes of the extract really complement the citrus flavour.

After turning out, I let the cake cool before drizzling on the glaze and sprinkling with the remaining zest.


Yum! Moist, sweet, tangy, satisfy and great with a cup of coffee with friends.

Oh so simple lunch

I love keeping chickens. Aside from their funny little personalities and curious habits I love the fresh eggs they give us (plus, at the rate we go through eggs it works out a lot cheaper to keep chickens than to buy them).

I often have eggs for lunch and one of my favourite ways to eat them is with smoked salmon and simple stir fried vegetables. Here was today’s lunch:


Dry fried egg on a couple of slices of smoked salmon, stir fried mushrooms, tomatoes, chilli, spring onions and red peppers, drizzled with a cheeky bit of sweet chilli. Delicious, satisfying and oh so simple.

Puy lentils with roasted veggies and goat’s cheese

This is the epitome of simple, rustic, midweek veggie dinner ideas. Packed with goodness, your body will smile at the thought of this delicious yet virtuous meal.


Firstly chop up whatever veg you fancy and put in a roasting tray. I used onions, garlic, courgette, carrot, baby sweetcorn, peppers, butternut squash, leek and tomatoes. I like to use a peeler to get really thin curls of courgette and carrot.


Season well with sea salt and black pepper, then splash in a generous glug of oil of your choice (I used olive on this occasion, but coconut works well too). Bake for about 45 mins in a hot oven turning regular.

Whilst the veggies are working their magic in the oven it’s time to get the lentils on. I use a small mug for three of us, and the lentils I use don’t need soaking, merely just rinsing under the tap.

Fry off some onion and garlic in olive oil until softened, adding in some fresh herbs halfway through. I used rosemary, thyme and a bay leaf. Once softened add the lentils and stir allowing them to absorb some of the flavours from the onion/garlic and herbs. Using the same mug you used to measure the lentils pour in half to a whole mug of red or white wine and let the alcohol cook off for a couple of minutes.


Finally add in two to two and a half mugs of stock of your choice, season and reduce the meat to a simmer.  Stir regularly and cook for about 30 minutes, or until they’re at a texture you’re happy with. Puy lentils are renowned for naturally having more of an al dente texture then a lot of other varieties, so they won’t turn mushy.

Once the veggies and lentils are done to your liking, pour the pot of lentils into the tray of veggies abse mix well, allowing the lentils to absorb even more flavour. Serve in wide bowls (pasta bowls are perfect) and sprinkle with goat’s cheese.
